This is a quick and simple breakfast that is raw vegan, fruitarian, and an example of good food combining.
Citrus is a wonderful breakfast food for many reasons: it's refreshing and bright - a nice wake up!, it's also acidic, which helps to break up the mucus that's collected in your body overnight. (Always drink a full glass of warm water with lemon upon waking, to break up mucus, and also to help digest your food which you'll eat ideally a half hour later.)
The oranges also sweeten the grapefruit, and the greens balance the fruit sugars.
Because of the particular health and nutritional benefits of the grapefruit and celery, this recipe is perfect for anyone with obesity or hypertension/high blood pressure.
Tips: Remember drink a glass of water 30 minutes before every meal, to aid digestion and prevent dehydration. Also, don't forget to chew slowly, to produce the saliva that is critical to proper digestion ("Drink your food and chew your juice"). Enjoy your food with love, gratitude, and moderation, and it will do its best to heal you so you can enjoy your life more and be of more service to others, and to our planet. Citrus Breakfast Salad
4-8 leaves of fresh, rinsed kale
1 grapefruit
2 large oranges
2 stalks of celery
In a large bowl, cut the kale into small, bite-size pieces to create one thin layer of greens, saving about 1/4 of the greens for the final part of the dish. Then peel the grapefruit, part it in half, then cut small, bite-size pieces to add a layer of grapefruit. Then do the same with one orange. Then grab the 2 celery stalks, cut the tips off a little bit, then slice them into very small pieces and finish them by layering them on top of the oranges. Then slice more of the kale to create a new and final layer of greens. Take the other half of the grapefruit, and cut and layer it, along with the last orange.
Makes one large serving or two regular sized ones.
